My husband is from Michoacan and his mom cooks a soup that she calls
morisqueta (spelling?). At first, I thought she didn't know how to cook
the rice which looked like a sticky blob that is mixed in with a chile and
espinazo (to give it flavor). When I went to West Africa, I came across
a very similar dish (but it had chicken). Further research indicated
that morizqueta is also an old Spanish term for gooey rice. Since West
Africa had strong influence from the Arabs, and Arabs influenced the Spanish
culture.......facinating, isn't it?
I have seen menudo made in Jalisco without the red sauce, which makes the
Basque connection there. It is my understanding that menudo is more
norteno. That too would make sense since menudo is made from beef, best
suited for arid regions. However, Jalisco is really known for its
pozole, both white and red.
I should have been a food anthropologist (sigh)
