From what I know is that most every home built their own manger some which were very elaborate.
Posadas were and are still a major part of the Christimas celebration. The children and their families travel with Jose and Maria seeking lodging during Advent. At the last home of the evening they serve beverages made from sugar cane and fresh fruits steeped in sweetened water. Each family makes their beverage slightly different. They then have a Pinata for the children and they are filled with candies called colaciones and other assorted candies.
Gifts were not a part of Christmas in the early days. Children would set their shoes out on Christmas Eve and wait for El Nino Dios to fill their shoes with hard candies. And of course being mostly Catholic there was midnight mass with a procession and mass again on Christmas Day.
