My understanding is that when a child was taken to the priests to be baptised, it was determined by him whether the child was mulato, moreno blanco, etc. This might have been more of the case in ranchos where it wasn't so important to have ethnic purity, as they were peones, who were never going to "be someone" anyway. It was much more important in affluent lines to know exactly what the blood lines were -
