You add patas de puerco to your pozole, and ears, and toe nails (just kidding), but really just about everything goes - not me, I'd rather just keep the espinazo and puerco de lomo. 

 

Patas de rez go excellent with menudo - hmmm, it sounds excellent, although I usually only eat the tripe, but the patas make the soup extra special....
