In my experience viewing matrimonios versus Informacion matrimonials, Informacion matrimonials are more detailed They can sometimes be two to three pages and they are usually testimonies of how the bride and groom know each other, testimonies from other family members of how they know the bride/groom etc. Usually these records are found a few months prior to the marriage possibly a month or two before the actual wedding takes place. One time I actually lucked out on viewing this type of information in Michoacan records and they listed my maternal great-grandmother's genealogy family tree three generations going back which was wonderful. On the matrimonios records I usually just find a few paragraphs giving basic information on the marriage, date, padrinos etc., parents and sometimes grandparents are listed if they are still living.
